Parmesan Walleye

Ingredients
4 walleye fillets
1 c all-purpose flour
1 t garlic salt
1 freshly ground pepper
1 t seasoning (Northwoods works, I use garlic powder sometimes too)
2 eggs, lightly beaten
1 T milk
1 ½ c parmesan cheese (freshly grated)
Directions

Preheat electric skillet to 375 degrees F.

On a flat plate, combine flour, salt, pepper and seasoning.

In a flat dish, combine eggs and milk and mix together.

Dry fillets on a paper towel.

Place fillets in flour.

Dip fillets in eggs wash.

Place back into flour and press to coat.

Place on a separate plate until all fillets are prepared.

Place small amount of oil on skillet.

Lay fillets on oil.

Place small amount of oil on top of each fillet.

Cover tightly (no steam escaping) and cook for 5 minutes.

Turn fillets and top with parmesan cheese (ok to let a little cheese flow onto skillet).

Remove fillets, taking any browned cheese with each fillet.

Season fillets with salt and pepper to taste.

Serve.
